The sweetening power of steviol glycosides is 250-350 times higher than that of regular sugar. They are derived from the leaves of the stevia plant (Stevia rebaudiana). The leaves of this plant are submerged in water for a week. The resulting aqueous solution is then purified and dried to obtain steviol glycoside crystals.
