At the heart of this spicy and austere unisex composition lies black pepper. A hot and invigorating note, short-lived and earthy-spicy, obtained by steam distillation from the berries of the piper negrum plant, often used as a bright accent in fragrances. This evergreen vine of the pepper family originates from South-West India, where it was cultivated for its fruits.

Slowly but surely, black pepper conquered other corners of the world; and today, its plantations are literally everywhere, from Brazil and Madagascar to Malaysia, Cambodia, and Indonesia. Interestingly, black pepper, green pepper, and white pepper are fruits of the same plant, differing only in their processing. To obtain black pepper, the berries are harvested just before they ripen.

They are then dried in the sun, resulting in fermentation, and in the pepper, molecules of limonene, pinenes, cresols (which give its aroma a phenolic, pharmaceutical aspect), and linalool are formed, as well as the sweetish heliotropin.
